SPEAKER AND SUBJECT –Karen Miller on Celiac Disease and her Three Dogs Gluten Free Bakery[-

Celiac Disease is caused by an inherited gene. Her first attack was so severe it felt like a heart attack.  She thinks an infection triggered her disease.  Celiac is a sensitivity to gluten, especially in flour that gives cohesiveness to the dough.  One in one hundred people have this autoimmune disease.  Domino's Pizza is now gluten free.  Unfortunately some hospitals are not aware of this disease.  She has zero tolerance to gluten, even in things like lipstick or lip gloss.  Ms. Miller will soon be married and will make her own wedding cake in her gluten free bakery  in Briarcliff Manor.  She and her fiancé have to divide their kitchen for her side to be completely gluten free.
